Chocolate Making Experience

Meet Brazil’s most loved dessert: the brigadeiro. It’s a cousin of the chocolate truffle but even more luscious and decadent, it’s every chocolate lover’s dream.

I learned how to make them from my mother, a chocolatier in Brazil, and I’m so excited to share them with you.

I started tinyB in San Francisco to bring people together through the magic of hand-crafted brigadeiros. I hope you love them as much as I do!

Instructions and Ideas

PREPARATION

Setting up your rolling station

1. Pour each topping on to separate plates.

2. Separate the paper cups.

3. Open the jars of brigadeiro (except the Brigadeiro Spread) and reserve a spoon for each.

4. Have a paper towel or wipe available.

5. Prepare a small bowl of water or a bit of butter for your hands.

6. On a clear table, place in order: water, 3 jars of brigadeiro, plates with toppings and paper cups.

Let’s do it!

Wet or lightly butter your hands. Scoop chocolate from a jar of your choice and roll it in your hand until round. Roll quickly or it will start to melt. Choose a topping and roll your brigadeiro in the plate until evenly covered. Roll it one more time to make sure sprinkles are not sticking out. Place it in a cup. That’s it—taste, repeat, and enjoy! Some classic flavors for inspiration: milk chocolate and sprinkles, dark chocolate with nuts, dark chocolate with coconut.

Pro-Tips 

A standard brigadeiro is 1 1/4″ across, but start with a smaller size as a sampler.

For the best flavor experience, cleanse your palate between sampling brigadeiros. Sparkling water, a slice of apple, or water with lemon work well.

The Brigadeiro Spread (if you have the Classic Kit – Party Size) is too soft to roll. Pop in the microwave for 10 seconds and spread it on fruit, toast, ice cream, etc.

It’s easier to blend flavors if you use one topping at a time.

Choose a style from the options below. Make three different brigadeiros with that in mind. Sweet, salty, spicy, sweet & sour, subtle, fruity, smooth, crunchy.

The Unexpected

Chocolate pairs with some surprising flavors. Find one of the following in your pantry and try it with dark or milk chocolate: Salt, olive oil, spices, crushed breakfast cereal or granola, etc. Create the most surprising, yet delicious, pairing you can.

Pairing

Microwave your jar of spread for 10 seconds and pair it with fruit, ice cream, or your favorite dessert. If pairing with wine, try dark chocolate and a full-bodied varietal like Cabernet Sauvignon or Pinot Noir.

The Chocolate Challenge

The Chef & The Taster

The chef creates a brigadeiro, and the taster does a blind tasting. Pair up and take turns. The taster earns 1 point for identifying the center and 1 point for the topping. The winner gets to be called “chocolatier” for the rest of the day.
