Wine & Chocolate Truffle Pairing Experience

Wine and chocolate are amazing on their own, however, when paired together, they can create surprising and delicious new experiences.

We’ve partnered with Voluptuary & Lucid Wines, an urban-industrial micro-winery based in Sacramento, to bring you some delicious natural wines that pair exceptionally well with our brigadeiros.

We hope you’ll have a fun time creating and rolling your own chocolate treats, all while sampling some delicious wine. It’s a great laid-back and fun experience to share with friends, colleagues, and loved ones. Enjoy!

Instructions and Ideas

PREPARATION

Setting up your rolling station

1. Clear a workspace and set out your kit’s contents

2. Open at least one of your wines and serve

3. Pour each topping onto separate plates

4. Separate the paper cups

5. Line up your chocolate shells, pipettes, and piping bags

6. Open the brigadeiro containers and reserve a spoon for each

7. Prepare a wipe or paper towel and a small bowl of water or butter for your hands 

8. Fill your piping bag with some brigadeiro (try the brigadeiro spread first)

9. (Optional) Our specialty brigadeiros can be filled with a ‘secret center’ like Bailey’s, Bourbon, Cointreau, peanut butter, marshmallows, jelly, and more. Gather anything from your pantry you think you might want to try!

Making Your Specialty Filled Brigadeiros

Extra Prep: Fill one quarter of your piping bag with brigadeiro by grabbing the middle of the piping bag with one hand and folding the top half of it over your hand to open it up. Gently spoon some brigadeiro into the piping bag, then twist the end until the bag meets the brigadeiro. With scissors, snip the tip off the bag and you’re ready to go!

Filling: Take one of your chocolate shells and fill it half way with your ‘secret center’ (think marshmallows, peanut butter, liquor, or jam) using a spoon or one of your pipettes. Cover the ‘secret center’ with some brigadeiro from the piping bag. Finally, wet or lightly butter your hands. Scoop a small amount of brigadeiro from one of the containers and gently roll it around the outside of your chocolate shell until it is covered with a thin, even layer of brigadeiro.

Decorating: Choose one or more toppings as a base color and roll your brigadeiro shell in the topping until it is evenly covered. Decorate the brigadeiro with individual sprinkles if you like and place it in a paper cup. That’s it. Try to change up the brigadeiro flavors and secret centers for your next two chocolate shells or even make a hot chocolate bomb (see Pro Tips for more info!)

Making Traditional Brigadeiro Truffles

Filling: Wet or lightly butter your hands. Scoop some brigadeiro from the container and gently roll it in your hands until it is round. Roll quickly or it will become too soft to work with.

Decorating: Choose one or more toppings and roll your brigadeiro in the topping/s on the plate until evenly covered. Roll it gently in your hands to make sure the toppings are firmly attached to the brigadeiro. Place it in a paper cup. And that’s it. To pair, take a generous bite of your brigadeiro and a small sip of wine. Notice how the flavors blend together. Repeat often!

Bonus: For extra decoration and fun, fill one of your pipettes with the wine or a different liquor and stick it into a brigadeiro. To eat, just squirt the pipette into your mouth and then take a bite of the brigadeiro. Yum!

Pro-Tips 

If your brigadeiro filling is too soft to roll, refrigerate for 30 minutes.

Start simple. It’s easier to blend flavors if you use 1 topping at a time.

For the best flavor experience, cleanse your palate between sampling brigadeiros. Sparkling water, a slice of apple, or water with lemon work well.

The brigadeiro spread (included in the Party Kit) is great to use on toast or baked goods. You can also warm it in the microwave for 10 seconds and turn it into a pourable sauce for ice cream!

You can use a pipette to fill your chocolate shell with a jam or liquor (Bailey’s, brandy, and orange liqueur work well!) or stick a filled pipette directly into a brigadeiro as decoration. The pipettes can be cleaned and reused.

Taste and Texture

Choose a style from the following options: Sweet, salty, spicy, sweet & sour, subtle, fruity, smooth, crunchy. Make three different brigadeiros with that in mind.

The Unexpected

Chocolate pairs with some surprising flavors. Find some pantry staples like salt, olive oil, spices, and breakfast cereal and try mixing it with your brigadeiro. Create the most surprising, yet delicious, pairing you can!

Pairing

Set up a brigadeiro tasting flight. Start with a fruit-flavored brigadeiro and finish with dark chocolate. Taste a brigadeiro, then have a sip of wine. Close your eyes, swirl it in your mouth and savor the combination. Note the flavors and at the end, compare. Experiment to find your sweet spot!

The Chocolate Challenge

Set a timer for 15 minutes. Choose any chocolate, toppings, props, or pantry ingredients to make the most impressive brigadeiros. Present your creations and vote for the best ones.

The Chef & The Taster

The chef creates a brigadeiro, and the taster does a blind tasting. Pair up and take turns. The taster earns 1 point for identifying the center and 1 point for the topping. The winner gets to be called “chocolatier” for the rest of the day.

Compete to see who can create the best Instagram-worthy photo shoot. Style your brigadeiros with props and backdrops. Tell a story about the scene.
