Fall Donut Cookie Experience

This delicious and delightful cookie experience captures the feelings and colors of Fall I love most: the smell of fresh baking, the beautiful shades of orange, the new flavors that come with a new season, and a desire to get creative.

These colorful cookie o’s are delicious buttery cookies that are covered with creamy Brazilian brigadeiro truffle and fun, colorful toppings. All you need are some basic ingredients, access to an oven, and a willingness to get your hands dirty to make at least 8 delicious cookies. It’s minimal effort for maximum fun and taste. Enjoy!

Get Ready!

Setting up your baking station

Ingredients

  1. 1 stick (113g) of softened unsalted butter
  2. 1 medium or large egg (if organic)
  3. 1 tsp of vanilla extract (optional)
  4. 1 tinyB Holiday Cookie Kit (with mix, brigadeiro, and toppings)

Equipment

  1. Mixing bowl
  2. Wooden spoon or spatula
  3. Small spoon or blunt knife for the brigadeiro
  4. Lined baking sheet or pan
  5. tinyB donut mold

Vegan Substitutes

  1. BUTTER: Substitute butter with vegan butter (100g)
  2. EGG: Substitute egg with flax seed meal (1 tbsp). Mix with 3 tbsp of water, and let it sit for 5-10 minutes until thick

Let’s Do It!

Baking the Fall Donut Cookies

  1. Preheat the oven to 350F
  2. Add the egg and the vanilla extract (optional) to a mixing bowl and beat until the egg is completely mixed
  3. Mix in the soften butter
  4. Mix in the cookie mix to form a dough (if the dough is too sticky, chill it in the fridge for 5-10 minutes)
  5. Divide the dough in half. Put one half in the fridge
  6. Gently press chunks of dough into the donut cookie mold until each ring is half full (you don’t need to grease the mold!). Set aside any leftover dough
  7. Bake the cookies for approximately 12-15 minutes or until golden brown
  8. Leave the cookies to cool for a few minutes in the mold, before turning out onto a cooling rack
  9. Repeat steps 5 to 8 with the other half of the dough

Baking a Classic Brigadeiro-Filled Cookie

  1. With any remaining dough, divide it into 2 even balls
  2. Using your finger, making a hole in the center of each ball and add roughly 1 tsp of brigadeiro
  3. Cover the brigadeiro with dough and roll into a ball
  4. Place the balls 2” apart on a baking sheet
  5. Bake for 12-15 minutes or until golden brown
  6. Leave them on the baking sheet or a cooling rack for at least 5-10 minutes before eating

Decorating the Fall Donut Cookies

  1. Get your decorations ready: open the brigadeiro containers and pour each topping onto separate plates
  2. Use a spoon or blunt knife to spread a thick layer of brigadeiro on top of a cookie
  3. Choose one or more toppings as a base color and gently press your cookie into the topping until evenly covered
  4. Decorate the rest of your donut cookie with the remaining festive toppings
    Taste and enjoy!

Classic Brigadeiros

Make some classic brigadeiros or spring-inspired brigadeiro shapes from your leftover brigadeiro filling.

Filling: Wet or lightly butter your hands. Scoop some brigadeiro (not the spread) from the container and gently roll it in your hands until it is round. Roll quickly or it will become too soft to work with. You can also get creative and shape the brigadeiro into a halloween-inspired shape like a pumpkin, a ghost, a spider, or a bat

Decorating: Choose one or more toppings and roll your brigadeiro or shape in the topping/s on the plate until evenly covered. Roll it gently in your hands or press it with your fingers to make sure the toppings are firmly attached to the brigadeiro. You can also use other items from your pantry like pretzels, oreo cookies, coconut, dried fruits, and more to bring your brigadeiro to life. Once decorated, place it in a paper cup or on a plate. And that’s it. Just taste, repeat using different flavors and textures, and enjoy!

Pro Tips

When refrigerated in a sealed container, your cookies will be fresh for one week. You can also freeze the cookie dough (or the baked cookies) for up to 6 months.

Any undecorated and uniced cookies can be warmed up in the microwave for 5 seconds for a freshly baked smell and taste!

If you have any leftover brigadeiro filling, you can use it on toast, as a fruit dip, or on any baked good. You can also warm it in the microwave for 10 seconds and turn it into a pourable sauce for ice cream!

Halloween Creatures

With some of your brigadeiro filling, design and make your own halloween-inspired creature. Some ideas include mummies, bats, pumpkins, monsters, and ghosts. Feel free to use any pantry staples or props like broken oreo cookies for bat wings or pretzel sticks for spider legs to bring your creature to life.
