Setting up your rolling station

Baking the Holiday Donut Cookies

  • Preheat the oven to 350F
  • Add the egg and the vanilla extract (optional) to a mixing bowl and beat until the egg is completely mixed
  • Mix in the soften butter
  • Mix in the cookie mix to form a dough (if the dough is too sticky, chill it in the fridge for 5-10 minutes)
  • Divide the dough in half. Put one half in the fridge 
  • Gently press chunks of dough into the donut cookie mold until each ring is half full (you don’t need to grease the mold!). Set aside any leftover dough
  • Bake the cookies for approximately 12-15 minutes or until golden brown
  • Leave the cookies to cool for a few minutes in the mold, before turning out onto a cooling rack
  • Repeat steps 5 to 8 with the other half of the dough

Baking the Brigadeiro-Filled Cookies

  •  
  • With any remaining dough, divide it into 2 even balls
  • Using your finger, making a hole in the center of each ball and add roughly 1 tsp of brigadeiro
  • Cover the brigadeiro with dough and roll into a ball
  • Place the balls 2” apart on a baking sheet
  • Bake for 12-15 minutes or until golden brown
  • Leave them on the baking sheet or a cooling rack for at least 5-10 minutes before eating

Decorating the Cookies

  • Get your decorations ready: open the brigadeiro containers and pour each topping onto separate plates 
  • Use a spoon or blunt knife to spread a thick layer of brigadeiro on top of a cookie
  • Choose one or more toppings as a base color and gently press your cookie into the topping until evenly covered
  • Decorate the rest of your donut cookie with the remaining festive toppings
  • Taste and enjoy!

Pro Tips

When refrigerated in a sealed container, your cookies will be fresh for one week. You can also freeze the cookie dough (or the baked cookies) for up to 6 months. 

Any undecorated and uniced cookies can be warmed up in the microwave for 5 seconds for a freshly baked smell and taste!

If you have any leftover brigadeiro filling, you can use it on toast, as a fruit dip, or on any baked good. You can also warm it in the microwave for 10 seconds and turn it into a pourable sauce for ice cream!
